HOW TO ORDER


We sell our beef by the ¼, ½ or whole cow. We will also sell ground beef in 30lb. amounts of one pound packages. If you want smaller amounts of beef, we suggest finding friends, or “cowpoolers”, who will split a cow or portion of a cow. However, we will need to work with one person representing the cowpoolers and will deliver to one address where the cowpoolers can pick up.

The final total cost of your order will depend on the hanging weight of your cow. For an estimate of the cost, a quarter cow generally weighs about 110 lbs. at $7/lb = $770. Final amount will be determined after your cow has been initially proceessed and weighed. See FAQ below package order for more information on how beef is calculated, processed and freezer space needed

Step 1: Determine the amount of beef you would like to order

If ordering a quarter, we offer three packages that include different cuts to suit your preferences. If you purchase a half or whole steer, you can have the meat cut more specifically per your instructions on our cutting order form. When you are ready to order, please select from the provided six package options listed below.

The cost of the 1/4, 1/2 and whole cow is $7/lb. of the hanging weight. The cost of 30lb. hamburger in 1 lb. packages is $6.50/lb. = $195.

Step 2: Make a deposit

After selecting a package, you’ll reserve your beef by making a deposit ($100 for 30 lb. ground beef, $150 for ¼, $200 for ½ or whole) and filling out your contact information through the order form.

Step 3: RECEIVE DELIVERY DATE OPTIONS AND CONFIRMATION

After receipt of your deposit and beef selection, we email you its weight, final cost and an approximate window of time for beef delivery on the day agreed upon (about 2 weeks after ordering).

We DO NOT ship our beef. We will deliver your beef anywhere within 90 miles of our farm. Orders outside of this area may be picked up at the farm.

Step 4: Submit remaining balance

After we email the cow’s final hanging weight, the remaining balance of your bill can be paid upon delivery by cash, check, or we can email you an invoice before delivery.

FAQ


How is the beef processed?

Our meat is state inspected at a USDA processing facility. We deliver our cows first thing in the morning to the processor so there’s very little stress on the cow. After initial processing, they dry age the meat in a cold locker for 12 days before cutting it to your specifications. They wrap your cuts in two layers of commercial grade freezer paper and then flash freeze it for a couple of days. We pick it up directly from the processor and deliver it to your home the same day. All processing fees, wrapping and freezing are included in your price.

How is it packaged?

All our meat is packaged in vacuum-sealed plastic and immediately flash-frozen for 3 days before your delivery.

How is the cost calculated?

The cost is $8/lb. on the “hanging weight” of the cow, which is the weight after the cow has been initially processed. A ¼ cow hanging weight generally weighs about 100-110 lbs. During the cutting process, the butcher will remove bones, gristle and fat which will mean the meat you take home will be 55-70% of the hanging weight, depending on how it is cut. The processing, vacuum-sealed packaging, taxes and delivery are included in this price.

In more specific terms, it could look like this:

After initial processing:

¼ cow at 100-110 lbs. hanging weight average @ $8/lb = $800-880 total cost*
*This is the amount you pay regardless of the take home meat after cutting.

Approximate cost after cutting:

¼ cow at 60-66 lbs take home meat average = $10-11 a pound**
**This is the average range of per pound you end up paying after cutting, regardless of the types of cuts you receive, e.g. sirloin vs. round steak vs. ground beef.

Why is the cost done this way?

Buying in bulk gives the grass-fed beef buyer an opportunity to purchase at a discounted price. It also helps the small farmer focus on grazing management rather than freezer inventory management.

How should I store my beef?

You will need around 3 cubic feet of freezer space for 100 lbs. frozen beef. One quarter should fit into 3 cubic feet. It should keep for years wrapped in the vacuum-sealed plastic package wrapping.

What are the percentages of cuts per cow?

A cow generally divides (depending on selected package) into about 40% ground beef, 25% roasts, 25% steaks and 10% other – stew beef, ribs, brisket. The ground beef is 80/20 – this means 80% beef to 20% fat. This is best for hamburgers, but if you order a half or whole and like leaner, you can specify in the notes of your order.

Do You Ship?

We do not ship our beef, but we welcome any customers to pick up their order from our farm. To find a farmer in your area, we encourage you to find a local producer through EatWild.com or LocalHarvest.org.
